Spiced banana ice lollies

Pre freezingFinished lolliesIt’s been a hot and sticky week at The Pickled Village so we thought we’d cool things down with some homemade ice lollies. We wanted to make our lollies quite indulgent and grown-up so our spiced banana curd (the Sweet Escape) seemed like the perfect summery flavour.

We used two ice lolly moulds from Waitrose but discarded the plastic sticks in favour of wooden sticks. Much prettier. The recipe below made 8 lollies.

Preparation time: 5 minutes
Freezing time: 8 hours/overnight

1 jar banana curd (we recommend The Sweet Escape!)
30g dark brown sugar
450g plain Greek yoghurt
1/2 tsp vanilla extract
1/2 tsp lemon juice

In a large bowl, mix the banana curd with the dark brown sugar making sure the sugar has dissolved. Stir in the yoghurt followed by the vanilla extract and lemon juice. Pour into ice lolly moulds and freeze for 8 hours or overnight. Find a little bit of shade and enjoy.
